When does the daily fast begin and end?

The daily fast begins at true dawn, when Fajr starts, and ends at sunset, when Maghrib starts. The Quran sets dawn and nightfall as the boundaries; the Prophet ﷺ explains the ending as sunset.

Quran 2:187 · Sahih al-Bukhari 1954

Does fasting begin at sunrise?

No. It begins earlier, at true dawn. The Prophet ﷺ distinguished true dawn, whose light spreads across the horizon, from the earlier vertical light known as false dawn. Finish suhoor by the start of Fajr, not sunrise.

Sahih Muslim 1094b

Must I stop eating a fixed number of minutes before Fajr?

No fixed extra interval is the start of the fast. The boundary is true dawn. Some timetables add an earlier precautionary time labelled imsak; check whether your timetable uses that label for a buffer or for Fajr itself.

Sahih al-Bukhari 1918–1919 · Dar al-Ifta: beginning of fasting hours

Why do prayer apps show different times?

They may use different locations or methods to estimate dawn. Islamic authorities use different calculation conventions. Check your location, time zone and calculation settings against a trusted local mosque or authority’s timetable; do not use another city’s times.
